The greensand and chalk soils allow the vines in each of their separate sites to flourish across the South of England. The contribution of an ideal climate allows the slow ripening of grapes to achieve the optimum level of ripeness and acidity. This in turn helps produce complex and finessed flavours.
Head winemaker Cherie Spriggs and her husband and fellow winemaker assess each handpicked vineyard individually. They choose the optimal time to harvest the grapes, supervising their gentle pressing to eventual vinification. Their passion for quality allows them to make the most informed blending decisions.
The wines are also crafted according to traditional methods. They are aged for extended periods of time, allowing generous post-disgorgement time before their release. All of these processes are done on site, within their own pressing centre and winery.
A wine for every course
Teaming up with one of Singapore’s most prominent luxury hotels, Shangri-La Singapore, Nyetimber has launched its high tea experience. Hosted at The Rose Veranda, an institution for high tea since its inception in 1991, the three-course high tea experience is perfect for those looking to appreciate the art of wine and experience Nyetimber’s range of English sparkling wines.
The tasting flight available for $58++ features three glasses of the Nyetimber Classic Cuvee (our personal favourite), Nyetimber Brut Rosé and Nyetimber Cuvee Chérie Demi-Sec.
The Classic Cuvee is paired with signature starters from The Rose Veranda. The array of entrées includes a strawberry lobster slaw sandwich, an egg and ham with truffle pressed panini, and a foie gras tart with granny smith apple and candied ginger.
The smooth mouthfeel of the Cuvee with hints of acidity cuts through the richness of the starters. It not only complements each serving but also provides a comfortable space to transition to the mains. Notes of honey, almond, pastry and baked apples are a welcoming surprise for seasoned drinkers who expect a stronger punch.
The mains include a choice of either a poached salmon roulade, a grilled chicken paillard, or seared king prawns.
The Brut Rosé is slightly spicier on the palate. Hints of star anise and cardamom bring out the savoury notes in the mains. Coupled with red liquorice, cherries and redcurrant, the much needed acidity cuts perfectly through the fattiness of the salmon.
Finishing off the meal with a three-tier dessert spread paired with the Cuvee Chérie Demi-Sec left us wanting another sip. Deemed the most versatile of all Nyetimber’s sparkling wines, it’s the ideal dessert wine for the meal. The Cuvee Chérie’s delicate honey notes are well-balanced with citrus flavours, making it elegant and delicate.
In line with the upcoming Mother’s Day celebrations, the three-tier dessert spread follows a subtle pink and white theme. Think Valentine’s Day on a milder level. Flavours such as rose and jasmine, strawberries and raspberries complement the sweeter note of the wine. Overall, the Nyetimber wine range is easy on the palate and a great alternative for celebrations.
The Nyetimber High Tea Experience is available from now until 15 July 2021. In keeping with the dine-in restrictions of 2 pax, guests will be able to try out the divine wines by the glass or bottle for themselves. All three wines are available for $58++ at both The Rose Veranda and Lobby Lounge.
